Knocking up some beef jerky for the lads when we watch the football GF on Sunday. Got some sizzle steak (thin sliced) BBQ steak and marinating it in a bottle of Masterfoods honey, soy, and garlic marinate. Added a teaspoon of onion powder, ground pepper, an extra half cup of straight soy, and about a cup of BBQ sauce.

Going to let it sit overnight and then dehydrate it. Will post the results here...
 
So I've finished marinating the sizzle steak (I got sizzle steak BTW so I didn't have to cut it thinly myself - it's already the right width) and the pic below shows it in the Excalibur dehydrator after a few hours with about another 8 hours to go.

Tip - Leave a little marinate on the meat for dehydrating. Some people advise and demonstrate scraping off as much of the marinate as possible before the dehydration process but this can make the end result less tasty. Also, I dehydrate larger pieces and then cut into small after it is dry because it makes handling easier with bigger pieces rather than a heap of little ones to lay out.

I'm pleased to say the honey, soy, and garlic BBQ beef jerky was an awesome hit last weekend whilst watching the NRL final. The BBQ was the predominate flavour but overall it was its easy eating (no real spices apart from pepper) which seemed to appeal to most people.

Oh that looks tasty. I've made a few batches of your biltong recipe with huge success but now I might give this a go.

LOL cheers mate. You can try all sorts of different flavours just pick things you like and marinate well before dehydrating.

Stronger flavours work best otherwise jerky can become very bland and I've made the mistake of making a "lite" version and it was like eating beef roast without sauce or seasoning - not good.
