I've been experimenting with picking mine the way the Asians do it but leaving a long section of leaf segment on the bottom of the fruit.
So I cut the fruit-bearing segment way back beyond the fruit which gives the fruit ongoing nutrient.
Then they go into the fridge with about a 12inch piece of segment still attached.
Mostly it's so they can bundle them all together in a jar for sale.
The segment acts as a branch with each fruit pointing outwards.
But the fruit seems to last a lot longer this way.

You need to cut it down. Cut it off on the truck of the tree at your shoulder height no higher.
Force the new shoots that grow from the old main stem to bend over back towards the ground.
Don't let it run up trees.
It's just a waste.
That part that's growing up in the branches will continue to grow since they are arboreal anyway.
But you will have the fruiting part down at your height.
