Recommend Stuffed Zucchini

Watching YouTube on TV a while back, a dish from Spain on a Fork was recommended...that got us watching him a bit, and this Spanish stuffed zucchini looked interesting. We still have two young adults here at home...one doesn't like cheese, the other doesn't care for zucchini, so I made it for breakfast Saturday to share with She Who Must Be Obeyed. The zucchini is from our new raised beds, the onion came from a local farmer's market, and the curled parsley garnish is from an older raised bed we have (closer to the kitchen door so we have a lot of herbs in it).

It turned out quite well, is relatively simple to make and we both enjoyed it. Since we had it on hand, we used crumbled feta and shredded parmesan. This is a keeper of a recipe and I'm sure I'll make it again when there's just the two of us.
