LILLY PILLY JELLY !!
Ingredients (method changes based on how much you have )

**Amounts are based on how much fruit / liquid you have after cooking

Lilly Pilly Fruit
White Sugar
Tartaric Acid
Water

Method
1 : Wash fruit well after removing stalks. Barely cover with water and bring to the boil. Cook until fruit is tender.
2 : Strain through jelly bag overnight or longer. (Do not squeeze bag, this will cause clouding).
3 : Add 1 Cup of White Sugar per 1 cup of liquid and bring to boil. Boil rapidly until small amount of juice gels in cold saucer. The addition of 1 teaspoon of tartaric acid to 7 cups of liquid helps to set.
4 : Bottle in sterilised jars.

**** If you do not have a jelly bag, wet several squares of cheesecloth big enough to line a colander or strainer

It will open a clean page for you. The next step is to copy & paste what you made in here on there and upload.

That looks like Syzigium luehmanii. I found some of those near my house the other day. I like them more than the Sydney magentas (S. panticulatum) - smaller but sweeter, and also growing in large clusters so picking them is simply a matter of trimming off the main fruiting stem. Good use!

Lilly Pillies are in peak season in most places right now so get out there and get some free food!

good thing also is a lot of these tree's grow in parks, community gardens etc

some people have them in their back yard but dont use them ... i found if you post in F/Book in your local community page and ask if anyone has a tree with ripe fruit can you come pic a bag for a few $$, alot of people say Yep and even a few say Come get it all for free ... lol

Hi ToeNailz that looks yummy when I lived in WA there was always fruit around just left for the birds or rot on the ground know one seemed interested in the fruit I think they thought it was poisonous as it wasn't on Woolworths shelves good to see you are making use of them. Cheers Dave

Hi ToeNailz that looks yummy when I lived in WA there was always fruit around just left for the birds or rot on the ground know one seemed interested in the fruit I think they thought it was poisonous as it wasn't on Woolworths shelves good to see you are making use of them. Cheers Dave

that jelly look s so brilliant and sharp a color never mind the toast or crackers just pass a jar and a spoon

you folks down under have some phenomenal fruits and berries to work with i'd love to sit and try every one

Looks so tasty! I have a lilly pilly hedge and a couple of bags of lilly pillies in the freezer as I didnt have time to cook them when they were ripe.

Looks so tasty! I have a lilly pilly hedge and a couple of bags of lilly pillies in the freezer as I didnt have time to cook them when they were ripe.
i'm not sure as i dont know what a steam juicer is .. lol
s long as it allows the water and fruit to boil and break down and dissolve the sugars like making normal jam it should be good
