ran across one of my ketchup recipes not half bad.
Aproxomate start weight 4 to 5 lbs ( vine weight ) whole plum tomatoes skinned seeded and crushed
2/3 cups white sugar
3/4 cup white distilled vinegar
1 teaspoon onion powder (not salt!)
1/2 teaspoon garlic powder (not salt!)
1 3/4 teaspoon salt
1/8 teaspoon celery salt
1/8 teaspoon mustard powder
1/4 tsp finely ground black pepper
1 whole clove
cook over slow low heat mashing and stirring as it reduces to nice thick ketchup paste
