Don't discard green potatoes. You only have to peel to a depth of about 2mm to be past the green into edible flesh. Or they can be used as the seed potato for the next season.

that's a lot of potato plants! I reckon I could eat all them in about 2 weeks lol

I've always been told that green potatoes have a toxin in them, no matter if you peel them. Though that they were safe to grow new potatoes from!

I guess if you're not confident then that's the best course of action. If there were elevated levels of Solanine in the white parts under the green then there would be quite a bitter, unpleasant taste. I've peeled a few like this and not experienced any problems. but of course, advise others to use their own discretion.
