I planned to make a Jarlsberg style cheese and thought i would start a thread on cheese making. If you have goats or cows and are milking them and are not making cheese you are missing out big time or just want a hobby which comes in handy when friends are over (wine and cheese night) you may have to wait for a while for friends to come over. There is a huge variety cheese you can make from soft, hard, mold ripened, blue cheese and for those who can't have milk there is vegan cheese made with nuts.
I was going to wright down the process but it would be very lengthy so will show a video made by Gavin Webber a Aussie guy from Milton Victoria he has a youtube channel it is one of the better ones to learn from. It's how i got started now Gavin's video and i will put up some of my pic's of my Jarlsberg style cheese making.


There is a number cheese making suppliers around Gavin has a on-line store and i use Green Living Australia for my supplies and if you are a bit of a handy man or girl you can make a cheese press and curd cutter so excuse mine there a bit rough.

Robbie that is a fine piece of cheese you have shown us!
I'm very envious, indeed!
My efforts have only extended to some not very interesting or flavourful soft cheese.
I wish I had a cow or goats to milk but two things prevent that.
Firstly, the fencing which is not good enough for either of those animals.
Two, that wild dogs come through my property to access the hills behind here and they have a tendency to eat anything that is small enough. They've previously gotten the neighbour's young calves.
There's a lady in these parts who teaches cheese making but charges over $100 per lesson to learn using her utensils and you buy a kit of little amounts of all the additives.
I don't know if that's the norm but it's too much for me especially when the first lesson only makes a cupful of day-old soft cheese.
It then takes two to three more lessons to make a cupful of washed rind cheese.
Easier for me to just buy it!

I have crackers...be right over!! I have Nubian goats and love making cheese, butter, Keifer and of course ice cream.

I love goats cheese chevre, bloomy goats cheese would be my favourite, at the moment i have gorgonzola dolce, racolette, 1 smoked, 1 spiced and a plain goulda and of course the jarlsberg cheese in wine fridge. I let my cheeses run down had to much in there lol.

I have never tried to smoke my cheese. Really, don’t know how. Weaning babies pretty soon so cheese making will start again.

I'd love to start making cheese!
I've only dabbled around with the 'easy' soft cheeses (ricotta and mozzarella), but would definitely like to learn more.

Milk is expensive here ($6 USD per gallon), but there seem to be an awful lot of goats on the island. I'll have to ask around and see if I can find a reliable source of goat's milk.

I'll be following your thread to see what I can learn.
