I have been give a nice watermelon quarter and would like to try pickling the rind . has anyone done this. I love eating pickels love the taste of vinegar. wondering what flavours would go well with this . I've never really pickled anything before solooking for something easy first.

I hadn't heard of this before, will definitely give it a go though. Hard to know what flavors would go well, maybe lemon, apple, cinnamon. Make a few small batches will different things & see what works :)

I've pickled Ginger quite a few times now, which is a nice easy one. I use the left over ginger from making ginger beer.

Basic brine is:
1-1/2 Tablespoons of Salt
1-1/2 Tablespoons of Sugar
1/2 cup vinegar - I used rice wine vinegar for the ginger, apple cider vinegar may be a good option for watermelon.
1 cup water

Then you just put it in the fridge for a few days before you eat it.

Never heard of pickling watermelon that interesting I would go ginger, apple, mint, cucumber, raspberry as flavours that go with watermelon and probably apple cider vinegar for flavour.

Plenty of recipes on the internet.
Just google it.
Many specify individual spices but on the whole, they add up to a pack of pre-mixed pickling spices.
For the amount of rind you have, you will only need half the pickling volume most recipes stipulate.
You can keep the brine to use next time if you want to pickle any veg or fruit regularly.
Just put into a big bottle and store in the fridge.
I reuse my pickling liquid. I've had a bottle going for several years. I add to the volume to make enough to cover whatever I'm pickling.
Then pour it off back into the storage bottle & back into fridge.
Then make a new batch to fill the pickling bottle with so the liquid is fresh and clear and doesn't discolour the contents.
It will only be a small volume since the bottle is packed with the veg being pickled.

I have a book called: Can It & Ferment It by Stephanie Thurow. Wonderfully easy and tasty recipes and it does have watermelon in it.

thank you so much I'll try the ferment and the pickle recipe . I love fermented foods something about being more then just a recipe you cook you need to care for the ferment and sometimes treat it like a baby feed it ,keep it clean ,make sure it's not to hot or not to cold .
